Dark Chocolate Chickpea Cookies With White Chocolate Chips

These dark chocolate chickpea cookies have an almost Oreo-like flavor, while being much healthier. The chickpeas not only make these cookies easily gluten free, but they also add fiber and protein to the cookies.

These cookies are moist, flavorful, and have very little fat. They are flour-free, and the white chocolate chips add a good amount of sweetness to the dark chocolate cookie.
Go ahead and try them right now.

Dark Chocolate Chickpea Cookies With White Chocolate Chips
  • 2 cups Chickpeas (or one can)
  • 1/3 Cup Dark Cocoa Powder
  • 1/3 Cup Brown Sugar
  • 2 Tablespoons Butter
  • 1/2 teaspoon Vanilla Extract

  • 1/4 teaspoon Baking Powder
  • 1/8 teaspoon Salt
  • 1 Tablespoon Milk (if looking too dry)
  • 1/3 Cup White Chocolate Chips
  1. Preheat oven to 350 degrees.
  2. In the bowl of a food processor, combine drained chickpeas, butter, cocoa powder, brown sugar, vanilla extract, baking soda, baking powder and salt.. Blend, scraping down sides occasionally, until smooth. If the batter appears dry, add one tablespoon of milk and blend again.
  3. Transfer the dough to a bowl and fold in the chocolate chips.
  4. Scoop onto parchment lined cookie sheets and bake for 12 to 15 minutes.

Butterscotch Chip Chickpea Cookies

Chickpea cookies are one of my favorite things ever. They are soft, moist and delicious, and you would never guess that they have beans in them if you didn't know otherwise. They are filled with fiber and protein, and yet they are the perfect, sweet dessert.

These butterscotch chip chickpea cookies are especially good. They are just as soft as any other chickpea cookie, and the butterscotch chips give them a rich, sweet flavor. If you haven't tried making chickpea cookies for yourself yet, then now is your chance. Bake up a batch of these cookies, and I know you'll love them.

Sugar/Fat/Gluten/Dairy Free Chocolate Chickpea Cookies

These cookies are sugar free, gluten free and fat free, and they are super easy to throw together, as well! Just combine all of the ingredients in the bowl of your food processor and puree until smooth. Then scoop onto parchment lined baking sheets, toss into an oven that has been preheated to 350 degrees, and bake for about twelve minutes.

These delicious, chocolate cookies are packed with chickpeas, giving them a good source of protein and fiber. They are made sugar free with NuNaturals' NuStevia Cocoa Syrup, which provides an easy way to take the sugar out of a recipe without really noticing the difference.

NuNaturals has many different NuStevia products (in addition to other items) and I love experimenting with them in different recipes. You can look forward to me posting many more sugar free recipes in the near future!

Chocolate Chip Chickpea Cookies

I have really fallen in love with using my food processor lately. I have made this recipe many times before, but I never fully appreciated the ease of letting the machine do the work for me until now.
It is especially nice with gluten free recipes. Using chickpeas instead of flour also adds to the easiness (not to mention the health) of this recipe, and it is just another reason to love it.

These cookies taste amazing, have a great, soft texture, and are a great way to add some fiber and protein to your diet (still eating in moderation, of course). I have been having fun experimenting with different variations of the recipe, so you can look forward to more posts of chickpea desserts soon!

2 Ingredient Chickpea Salad

Finding a super quick, healthy snack can be challenging at times. For me a go-to item is string cheese, but you can only have so much of one thing before you get bored of it.
I had some chickpeas in my fridge one day, waiting to be made into hummus, and I decided to give them a try as a cold salad. All I did was chop up a pickle slice and add it into a bowl along with the cold chickpeas and I was done. I had a delicious, super easy and healthy, two ingredient snack.

2 Ingredient Chickpea Salad

  • Chickpeas, cooked and cooled completely
  • Pickle
  1. Chopped the pickle and dump it into a bowl (along with a bit of pickle juice, if desired).
  2. Add the chickpeas, stir, and enjoy!

That's it! An easy, healthy snack to add some variety to your life.
