Easy Single Serve Scotcheroo Bar

Why make something to share when you can make a single serve treat all for yourself? This single serve scotcharoo bar is delicious and made in just minutes!

I love scotcheroo bars. And this recipe gives me the excuse to make them anytime I want!

Chewy and filled with peanut butter and chocolate flavor, this is the perfect treat!




Easy Single Serve Scotcheroo Bar
  • 1 Tablespoons Sugar
  • 1 Tablespoons Corn Syrup
  • 1 Tablespoons Peanut Butter
  • 6 Tablespoons Crispy Rice Cereal
  • 1 1/2 Tablespoons Chocolate Chips
  • 1/2 Tablespoon Butterscotch Chips
  1. Microwave sugar and corn syrup and 10 seconds, stir, and then 10 seconds more, stir, and 10 seconds more, or until sugar granules have disappeared.
  2. Stir in peanut butter.
  3. Stir in cereal.
  4. Grease a small ramekin or bowl and dump scotcheroo into it. Press down.
  5. Microwave chocolate chips and butterscotch chips together until melted, 15 seconds at a time and stirring.
  6. Spread chocolate/butterscotch mixture on top.
  7. Remove from ramekin and enjoy.

Gluten Free Browned Butter Chocolate Chip Bars

There are few things I like better than a chocolate chip cookie fresh from the oven. But these browned butter chocolate chip bars are amazing! They are simple to make, have an extra delicious flavor thanks to the browned butter, and are quickly becoming a go-to recipe of mine!

If you love all things chocolate chip cookies, then you will love these bars!



All of the recipes that Karly from Buns in my Oven posts always look so delicious, and as soon as I happened upon her browned butter chocolate chip bars I knew that I had to try them gluten free! You will love them, too! If you aren't gluten free make sure to check out her version.

Gluten Free Browned Butter Chocolate Chip Bars
  • 6 Tablespoons Butter
  • 6 Tablespoons Brown Sugar
  • 2 Tablespoons Sugar
  • 1 teaspoon Vanilla Extract
  • 1/2 Flax-Egg (directions on side of blog)
  • 3/4 Cup plus 1 Tablespoon Brown Rice Flour
  • 1/4 Cup Cornstarch
  • 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 Cup Chocolate Chips
  1. Preheat oven to 350 degrees.
  2. Place the butter in a small saucepan and melt, stirring constantly, until browned. It will foam up some. And then it will smell nice and nutty once it is done. Set it aside for 5 minutes to cool.
  3. In a small bowl, combine brown rice flour, cornstarch, xanthan gum, baking soda and salt. Whisk together. 
  4. In a medium size bowl, beat together the butter and sugars.
  5. Add the vanilla and egg and beat into the butter/sugar mixture.
  6. Stir in the flour mixture, then the chocolate chips.
  7. Line a 8x8 inch square pan with parchment paper and spread the bars out onto it.
  8. Bake for 15 minutes. I like eating them while they are still warm, but they will hold together much better if you wait a half hour or so.

Gluten Free Applesauce Bread

If a bread that is super moist and lightly flavored with vanilla and cinnamon sounds good to you, then you are going to love this gluten free applesauce bread!

This bread is the perfect item to make as a side to a breakfast smoothie or for an afternoon snack. No matter how you eat your bread, though, you are going to love it!



Gluten Free Applesauce Bread
  • 3 Tablespoons Water
  • 1 Tablespoon Flaxseed Meal
  • 6 Tablespoons Butter, softened
  • 3/4 Cup Sugar
  • 1 Cup Applesauce
  • 1 teaspoon Vanilla Extract
  • 3/4 Cup White and/or Brown Rice Flour
  • 1/2 Cup Cornstarch
  • 1 teaspoon Xanthan Gum
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  1. Heat the water and add the flaxmeal to it. Set aside for about 10 minutes.
  2. Preheat oven to 350 degrees.
  3. Whisk together all of the dry ingredients.
  4. Cream together butter and sugar.
  5. Add applesauce, vanilla and flax-egg and beat again.
  6. Add the dry ingredients into the wet and stir just until combined.
  7. Pour into a 8.5 by 4.5 inch loaf pan and bake for 40 to 45 minutes.

Easy Chocolate Peanut Butter S'mores

S'mores are a delicious and easy dessert, and these chocolate peanut butter s'mores are even better than the original! And they are made in the microwave, too, so you can have them anytime!

If you love chocolate, peanut butter, and marshmallows, then this is the dessert for you. It's an easy single serve treat that will satisfy all of your cravings at once.

I used WOWBUTTER soybutter and Dandies vegan marshmallows in my s'mores, but you can use the "real" versions if you want. Whatever works best for you.






Easy Chocolate Peanut Butter S'mores 
  • 2 Chocolate Cookies (like these)
  • 1 Tablespoon Chocolate Chips
  • 1/2 Tablespoon Peanut Butter (or soybutter like WOWBUTTER)
  • 1 Marshmallow (I used vegan Dandies)
  1. In a small microwave safe bowl, combine chocolate chips and peanut butter. Microwave 15 seconds at a time, stirring, until melted.
  2. Place one cookie on a plate and put the marshmallow on top. Microwave until the marshmallow is puffy.
  3. Spoon the chocolate/peanut butter mixture over the marshmallow and top with the second cookie. Eat while still warm.

Gluten Free/Vegan Chocolate Cookies

A gluten free and vegan cookie that tastes just as good as any chocolate cookie you would bite into? I say, yes! These cookies are easy to make and taste so good you won't know they are gf and vegan!

I have been trying to experiment a bit with vegan recipes lately, ever since I realized that I don't have many of them on my blog. There are some people who have to eat dairy free, or who are vegan by choice, and I want to offer them more delicious dessert options.

So, here is one delicious, easy-to-make, and amazing vegan cookie recipe. Try it, and I know you'll love it!




Gluten Free/Vegan Chocolate Cookies
  • 2 Tablespoons Applesauce
  • 1/4 teaspoon Baking Soda
  • 2 Tablespoons Oil
  • 1/2 teaspoon Vanilla Extract
  • 1/4 Cup Brown Sugar
  • 2 Tablespoons Sugar
  • 6 Tablespoons Brown Rice Flour
  • 2 1/2 Tablespoons Cornstarch
  • 2 Tablespoons Cocoa Powder
  • 1/2 teaspoon Xanthan Gum
  • 1/4 teaspoon Salt
  • 1/2 Cup Vegan Chocolate Chips
  1. Preheat oven to 400 degrees.
  2. In a small bowl, combine applesauce and baking soda. Set aside for a few minutes.
  3. In a medium size mixing bowl, combine brown sugar, sugar, brown rice flour, cornstarch, cocoa powder, xanthan gum, and salt. Whisk together.
  4. Add the applesauce mixture, oil, and vanilla to dry ingredients and mix until fully combined.
  5. Stir in chocolate chips.
  6. Scoop cookies onto a parchment lined sheet pan and bake for 8 to 10 minutes.
