Gluten Free Chocolate Whoopie Pies

These whoopie pies are The. Best. Thing. Ever.

Seriously.

They are oh, so soft and chocolate-y and delicious. You have to make them and try them yourself... because I'm not sharing any of mine. ;)





Gluten Free Chocolate Whoopie Pies
  • 1/2 Cup plus 1 Tablespoon Rice Flour
  • 3 Tablespoons Potato Starch
  • 2 Tablespoons Tapioca Flour
  • 1/3 Cup Cocoa Powder
  • 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 Cup Brown Sugar
  • 2 Tablespoon Unsalted Butter, melted and cooled
  • 2 Tablespoons Unsalted Butter, at room temperature
  • 3 Tablespoons Water, warmed
  • 1 Tablespoon Flaxseed Meal
  • 3/4 teaspoon Vanilla Extract
  • 1/2 Cup plus 2 Tablespoons Milk
  1. Put two Tablespoons of the butter into a microwave safe bowl and melt.
  2. In another small bowl microwave the three tablespoons of water for about twenty seconds, then add the flaxseed meal to it and set aside for ten minutes.
  3. Preheat oven to 350 degrees.
  4. In a large bowl, combine the rice flour, starches, cocoa powder, xanthan gum, baking soda, baking powder, salt and brown sugar and mix under just small lumps of the sugar remain.
  5. Add both butters and mix into the dry ingredients with a fork until crumbly.
  6. Add the vanilla and flax-egg and mix.
  7. Add the milk and beat until the batter thickens and becomes elastic.
  8. Line baking sheets with parchment paper and scoop out your batter. Bake for 8-10 minutes.
  9. Allow to cool on baking sheet and then completely on cooling rack, and then find pairs and fill with the frosting of your choice.

Two Ingredient Butterscotch Fudge

Two ingredient recipes.

Does it get any easier than that?

Especially around the holidays, or any special occasion (such as Valentine's Day!) when you want to make a little treat, this two ingredient recipe comes in handy and is a great, simple dessert to make.


My sister absolutely loved this fudge.

It is creamy and butterscotch-y and delicious. It is definitely worth a try - especially with how easy it is to throw together!



Two Ingredient Butterscotch Fudge
  • 1 (12 oz.) Bag Butterscotch Chips
  • 1 (16 oz.) Can Vanilla Frosting
  1. Melt butterscotch chips in a microwave safe bowl.
  2. Add the frosting to the melted chips and stir until combined.
  3. Pour into a foil-lined 8x8 square pan and let set until cool. Cut into small pieces.

Gluten Free Banana Chocolate Chip Cookies

If you are looking for a chocolate chip cookie with a twist, and one that is a bit healthier than the classic version, these gluten free banana chocolate chip cookies fit the bill.

They are incredibly soft and have a subtle banana flavor to them... not to mention the melty chocolate chips found inside...

Yum. These cookies are delicious. 
If you are looking for something different to make instead of making the same old recipe once again, give them a try!




Banana Chocolate Chip Cookies

  • 3/4 Cup Brown Rice Flour
  • 1/2 Cup Cornstarch
  • 1/2 teaspoon Xanthan Gum
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Baking Soda
  • 1/2 Cup Sugar
  • 1/4 Cup Butter, softened
  • 1 1/2 Tablespoons Applesauce
  • 2 Tablespoons Flaxseed Meal, divided
  • 3 Tablespoons Water
  • 1/2 teaspoon Vanilla Extract
  • 1/2 Cup Mashed Banana
  • 1 Cup Chocolate Chips
  1. Heat 3 Tablespoons water for about 20 seconds in the microwave and add 1 Tablespoon of the flaxseed meal to it. Set aside for 10 minutes.
  2. Preheat oven to 400 degrees.
  3. In a medium size bowl, combine the brown rice flour, cornstarch, xanthan gum, baking powder, salt, baking soda. Whisk together.
  4. In a large bowl beat the butter and sugar. 
  5. Add the flax-egg, applesauce and vanilla and beat again.
  6. Mix in the mashed banana.
  7. Add in the dry ingredients and stir until combined.
  8. Finally, add the remaining 1 tablespoon of flaxmeal and the chocolate chips and stir once more.
  9. Scoop onto parchment lined baking sheets and bake for 12-15 minutes.

Snickerdoodle Fudge - Just in Time for Valentines Day!

If you are a fan of quick-and-easy desserts, this fudge is sure to make you happy. It is the perfect recipe Valentines day, allowing you to make something special without taking a whole lot of time to do so.

Not only is it easy, it is also creamy and delicious, tasting and looking like you've put a lot of time and effort into it.

Make everyone happy - including yourself - this Valentines day, when you throw together this quick-and-easy Snickerdoodle Fudge.




Snickerdoodle Fudge
  • 2 Cups White Chocolate Chips
  • 1 (16 oz.) Can Vanilla Frosting
  • 1/2 - 1 teaspoon Cinnamon
  • Cinnamon and Sugar
  1. Pour white chocolate chips into a microwave safe bowl and microwave until melted, stirring occasionally.
  2. Add frosting to melted chips and stir until combined, then add the cinnamon and stir again.
  3. Pour into a 9x9 pan that is lined with foil, or a smaller pan for thicker fudge, and top with a cinnamon and sugar mixture.
  4. Let cool and then cut into small pieces.

Hummus Sandwich

If you are looking for a good, easy and inexpensive vegetarian sandwich, this is the one for you.

The hummus is garlic-y and delicious, the pickles adding some acidity, the cheese balancing it all off... you won't even notice that the meat is missing.




Hummus Sandwich
  • Garlic Hummus
  • Cheese
  • Pickles
  • Optional, any vegetables of choice
  1. Prepare your hummus.
  2. Lay out two gluten free bagels, or bread of choice, and spread a good amount of hummus on the bottom piece.
  3. Slice the cheese and pickles (and vegetables, if using) and place on top of the hummus. Top with other half of bagel and enjoy.

Frozen Grapes - The Perfect Snack

Frozen grapes.
A quick, healthy snack.
You don't know what you've been missing out on until you try them. Seriously.

Grapes are good in and of themselves, but when frozen they are transformed into a dessert. So delicious. You really have to try them.

  1. Pluck the grapes from the vine and toss them into a freezer safe storage container.
  2. Once the grapes are frozen, take as many out at a time as you like and enjoy!

Just a quick warning, they can become very addicting. ;)

Gluten Free/Egg Free Banana Bars

The first time I made these bars it was a little while after my sisters and I had moved into our apartment together. I mixed them up and we laughed at the huge pan of bars that we ended up with. We ate some and I froze some and we had plenty of bars for a good, long time.
So, now I halved the batch for you. It still makes a 9x13 pan, but with how good these are, you will have them gone in no time! Feel free to double the batch to make the original amount if you want to feed a crowd - of if you're just in the mood for a ton of delicious banana bars. :)



Gluten Free/Egg Free Banana Bars
  • 3/4 Cup Sugar
  • 1/4 Cup Butter, softened
  • 1/2 Cup Plain Yogurt (regular or Greek)
  • 1 Tablespoon Ground Flaxseed
  • 3 Tablespoons Hot Water
  • 1 Large Banana (about 1/2 cup mashed)
  • 1 teaspoon Vanilla
  • 1/2 Cup plus 2 Tablespoons Brown Rice Flour
  • 1/4 Cup Potato Starch
  • 2 Tablespoons Tapioca Starch
  • 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  1. Heat the 3 Tablespoons of water and add the ground flaxseed to it. Set aside for about 10 minutes.
  2. In a small bowl whisk together brown rice flour, starches, xanthan gum, baking soda and salt.
  3. In a large bowl place sugar, butter, yogurt and egg and stir. 
  4. Stir in the mashed bananas and vanilla.
  5. Add the dry ingredients to the wet mixture and mix together.
  6. Pour into a greased 9x13 inch pan at 375 degrees for 18 to 20 minutes.

Garlic Hummus

I found this amazing recipe for hummus that didn't take tahini a while ago, and I have made it a bunch of times since! It is amazing, a delicious blend of garlic and cumin, made as thin or thick as you'd like...

I love it.

It tastes amazing, is super easy to throw together, and is heatlhy, too. Not to mention cheap. If you're looking for an inexpensive appetizer, this definitely qualifies.





Garlic Hummus 
  • 2 Cups Chickpeas 
  • 1 Clove Garlic, minced
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Lemon Juice
  • 2 teaspoons Cumin
  • 1/2 teaspoon Salt
  1. Add all of the ingredients to your food processor and blend until combined, adding a bit of water if desired.
  2. Eat right away or store in your fridge for a couple of days until you're ready to consume it.
