Gluten Free/Vegan Chocolate Cutout Cookies

These chocolate cutout cookies are gluten free and vegan, allowing everyone to have a bit of Christmas cheer! They are delicious and perfect for eating around the holidays or any time of the year.

If you love chocolate and pretty cookies that you can decorate, then you are going to be a huge fan of these cookies! They are soft and chewy and perfect with a full chocolate flavor!






Gluten Free/Vegan Chocolate Cutout Cookies
  • 2 Tablespoons Applesauce
  • 1/4 teaspoon Baking Soda
  • 2 Tablespoons Oil
  • 1/2 teaspoon Vanilla Extract
  • 1/4 Cup Brown Sugar
  • 2 Tablespoons Sugar
  • 1/2 Cup Rice Flour (I used superfine Asian, might require a bit less with regular rice flour)
  • 1/4 Cup Tapioca Starch
  • 3 Tablespoons Cocoa Powder
  • 1/2 teaspoon Xanthan Gum
  • 1/4 teaspoon Salt
  1. Preheat oven to 350 degrees.
  2. In a small bowl, combine applesauce and baking soda. Set aside for a few minutes.
  3. In a medium size mixing bowl, combine brown sugar, sugar, rice flour, tapioca starch, cocoa powder, xanthan gum, and salt. Whisk together.
  4. Add the applesauce mixture, oil, and vanilla to dry ingredients and mix until combined. Will be very dry and crumbly.
  5. Pat dough together and roll out between two sheets of plastic wrap. Cut into desired shapes.
  6. Bake for 7 to 9 minutes. Makes about a dozen cookies, depending on the size of your cookie cutter.
  7. Cool and frost with a powdered sugar/water glaze, if desired.

Gluten Free/Vegan Chocolate Cookies

A gluten free and vegan cookie that tastes just as good as any chocolate cookie you would bite into? I say, yes! These cookies are easy to make and taste so good you won't know they are gf and vegan!

I have been trying to experiment a bit with vegan recipes lately, ever since I realized that I don't have many of them on my blog. There are some people who have to eat dairy free, or who are vegan by choice, and I want to offer them more delicious dessert options.

So, here is one delicious, easy-to-make, and amazing vegan cookie recipe. Try it, and I know you'll love it!




Gluten Free/Vegan Chocolate Cookies
  • 2 Tablespoons Applesauce
  • 1/4 teaspoon Baking Soda
  • 2 Tablespoons Oil
  • 1/2 teaspoon Vanilla Extract
  • 1/4 Cup Brown Sugar
  • 2 Tablespoons Sugar
  • 6 Tablespoons Brown Rice Flour
  • 2 1/2 Tablespoons Cornstarch
  • 2 Tablespoons Cocoa Powder
  • 1/2 teaspoon Xanthan Gum
  • 1/4 teaspoon Salt
  • 1/2 Cup Vegan Chocolate Chips
  1. Preheat oven to 400 degrees.
  2. In a small bowl, combine applesauce and baking soda. Set aside for a few minutes.
  3. In a medium size mixing bowl, combine brown sugar, sugar, brown rice flour, cornstarch, cocoa powder, xanthan gum, and salt. Whisk together.
  4. Add the applesauce mixture, oil, and vanilla to dry ingredients and mix until fully combined.
  5. Stir in chocolate chips.
  6. Scoop cookies onto a parchment lined sheet pan and bake for 8 to 10 minutes.

Sugar Free/Gluten Free/Vegan Black Bean Cake

If you have always been too afraid to try black beans in a dessert before, then now is the perfect time for you to get over that fear. This sugar free black bean cake tastes just like a "normal" chocolate cake without all of the bad-for-you ingredients. The black beans substitute for the flour and NuStevia Simple Syrup is put in place of the sugar.

The cake is healthy, moist and tasty. I dare you to give it a try!






Sugar Free Black Bean Cake
  • 9 Tablespoons Water
  • 3 Tablespoons Flaxseed Meal
  • 2 Cups Black Beans
  • 2 Tablespoon NuStevia Simple Syrup
  • 2 Tablespoons Oil
  • 1/2 teaspoon Vanilla Extract
  • 1/2 Cup Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vinegar
  1. Preheat oven to 350 degrees.
  2. Put the water and flaxseed meal in the bowl of your blender and pulse a couple of times. Let sit a few minutes.
  3. Add all of the rest of the ingredients besides the baking soda and vinegar and blend until very smooth.
  4. Move batter into a medium size bowl and sprinkle baking soda over the top. Add the vinegar and fold in just until combined.
  5. Dump into a greased 8x8 inch pan and bake for 20 to 25 minutes.

Gluten Free and Vegan Chocolate Chip Mug Cookie

Sometimes it's really hard to wait for a fresh baked cookie. If you are hungry for one right now, and you don't want to have to go through the whole process of mixing up a dough and waiting for it to bake for 10 minutes, then I have a solution for you. This gluten free and vegan chocolate chip mug cake is perfect for any time when you want a quick, easy and delicious cookie fix.

Just mix all of the ingredients together, toss it into the microwave for a minute, and it will be ready to eat. I could go for another right now...

The only bad thing about this cookie is that it is so easy to make, that it is temping to eat over and over again! But since this is lightened up with applesauce in place of butter, and is gluten free and vegan, you don't have to feel too guilty about eating it.






Gluten Free and Vegan Chocolate Chip Mug Cookie
  • 1 1/2 Tablespoons Water
  • 1 Tablespoon Applesauce
  • 1/8 teaspoon Vanilla Extract
  • 1/2 Tablespoon Flaxseed Meal
  • 1 Tablespoon Sugar
  • 1 Tablespoon Brown Sugar
  • 1 Tablespoon Cornstarch
  • 3 Tablespoons White Rice Flour
  • A pinch Salt
  • 2 Tablespoons Chocolate Chips
  1. Measure all ingredients besides the chocolate chips into a mug. Stir together until well combined.
  2. Stir in chocolate chips.
  3. Microwave for about 60 seconds.
  4. Remove from microwave and be careful not to burn yourself. Enjoy!

Gluten Free and Vegan Bagel Bread

This bagel bread is slightly sweet, and I make it in small slices that are perfect toasted and served with cheese. I also like to make croutons out of this bread and add them to salads for a perfect crunch.

Most recently, I made this bread for my New Year's Eve party. I cut it into thin slices, toasted it, and served it with the cheese tray. It was a big hit.

Gluten Free and Vegan Bagel Bread
  • 3 Tablespoons Water
  • 1 Tablespoon Flaxseed Meal
  • 1/3 Cup Warm Water
  • 2 Tablespoons Sugar
  • 1 teaspoon yeast
  • 2 Tablespoons Oil
  • 1/2 Cup Brown Rice Flour
  • 2/3 Cup Tapioca Starch
  • 2 Tablespoons Potato Starch
  • 1 1/4 teaspoon Xanthan Gum
  • 1/2 teaspoon Salt
  1. Heat the 3 Tablespoons of water in the microwave and add to it the flaxseed meal. Let sit for 10 minutes.
  2. In another small, microwave safe bowl heat 1/3 cup water just until warmed but not too hot to kill the yeast. Add yeast and sugar and set aside for 5 minutes.
  3. Meanwhile, in the bowl of a stand mixer combine starches, rice flour, xanthan gum and salt.
  4. Go back to your liquid ingredients and add the flax-egg and the oil to the yeast mixture.
  5. Add the liquids to the dry ingredients and mix on low until combined. Turn mixer to medium and mix for 2 to 3 minutes more.
  6. Spoon batter evenly into two mounts on a parchment lined baking sheet. Form two loaves, roughly 5 by 2 inches, using wet fingers.
  7. Let rise for about half an hour. They will look a bit puffier, but don't expect them to double in size.
  8. Preheat oven to 350 degrees. Bake for 22 to 28 minutes. Cool, slice and broil before serving, or freeze for later.

Sugar/Fat/Gluten/Dairy Free Chocolate Chickpea Cookies

These cookies are sugar free, gluten free and fat free, and they are super easy to throw together, as well! Just combine all of the ingredients in the bowl of your food processor and puree until smooth. Then scoop onto parchment lined baking sheets, toss into an oven that has been preheated to 350 degrees, and bake for about twelve minutes. 

These delicious, chocolate cookies are packed with chickpeas, giving them a good source of protein and fiber. They are made sugar free with NuNaturals' NuStevia Cocoa Syrup, which provides an easy way to take the sugar out of a recipe without really noticing the difference.

NuNaturals has many different NuStevia products (in addition to other items) and I love experimenting with them in different recipes. You can look forward to me posting many more sugar free recipes in the near future!






Sugar Free Chocolate Chickpea Cookies 
  • 2 cups Chickpeas (or one can)
  • 1/3 Cup Cocoa Powder
  • 2 to 3 Tablespoons NuStevia Cocoa Syrup
  • 2 Tablespoons Applesauce
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Baking Powder
  • 1/8 teaspoon Salt
  1. Preheat oven to 350 degrees. 
  2. In the bowl of a food processor, combine drained chickpeas, cocoa powder, NuStevia Cocoa Syrup, applesauce, vanilla extract, baking soda, baking powder and salt. Puree, scraping down sides occasionally, until very smooth.
  3. Scoop onto a parchment lined cookie sheet (they won't spread much at all) and bake for 12 to 15 minutes.
  4. Makes 12 to 18 cookies.

Recipe: Gluten Free/Vegan Black Bean Brownies

I'm sure you've heard it all before... that nothing gluten free can taste good. That the gluten free diet means that you have to eat heavy, bad-tasting, dry, egg-y or expensive foods. Etc.
People can be very negative when they're talking about gluten free foods. And people can be very skeptical about trying them and making them.
This blog is to prove that there are good gluten free recipes and foods out there. I promise to give you only the best, just the ones that I myself love. Because, in the gluten free world, we need more positive-ity. We need one place we can count on to find good recipes, and only good recipes.

These gluten free black bean brownies were one of the first gluten free recipes that I tried and they are amazing. 
Not only are these brownies healthier than the real thing (much healthier), but they taste delicious and are surprisingly fudgy and decadent! I have made them so many times since finding the recipe, and they have turned out great each time.

Here you will find only the best gluten free recipes.





Gluten Free/Vegan Black Bean Brownies
  • 2 Tablespoons Flaxseed Meal
  • 6 Tablespoons Water
  • 3 Tablespoons Oil of choice
  • 1/2 cup white sugar or 2 Tablespoons NuStevia Simple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 3/4 - 2 Cups Black Beans (you can cook them yourself, or use a 15 oz can)
  • 3/4 Cup Cocoa Powder
  • 1 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  1. In the bowl of a food processor, combine flaxmeal and water and pulse a couple of times. Let the mixture sit a few minutes. 
  2. Add all remaining ingredients and blend a few minutes, until smooth, scrapping down sides as needed.
  3. Pour into a greased muffin tin (makes 12) or a 9" pan. 
  4. Bake at 350 degrees for about 20 minutes.
