Chocolate Brownie Peanut Butter Cups

These chocolate brownie peanut butter cups are easy to make, full of chocolate and peanut butter flavor, and are the perfect treat for any time of year!

Whether you like making treats like this for Christmas, for parties, or just for yourself, you are going to have fun when you make these little cups. I love using my mini muffin tin for all kinds of treats, and you can find more of them by clicking here.

Anyone who is a big fan of the classic chocolate/peanut butter combo will love these little treats!







Easy Chocolate Cake Cups
  • 1 1/2 Cup Chocolate
  • 3 Tablespoons Peanut butter or soybutter
  • 1/6 of a pan of Brownies, or one large Brownie
  1. Line a mini muffin tin with 12 paper wrappers.
  2. In a microwave safe bowl, melt the chocolate in 20 second intervals, stirring.
  3. Divide half of the chocolate between all 12 wrappers, spreading it around up the sides of the wrappers. Chill until solid.
  4. Melt the peanut butter. Add the brownie to it and mix until combined.
  5. Add a bit of the brownie/peanut butter mixture to each of the chocolate cups, pressing down.
  6. Top with remaining chocolate.
  7. Chill until solid and consume. Keep leftover cups in the fridge.

Double Chocolate Marshmallow Brownies

These gluten free brownies have a fun and easy twist with the addition of marshmallows and chocolate chips! 

If you love marshmallows and chocolate, then you will fall for these brownies! They are fun, delicious, and simple to put together.





Double Chocolate Marshmallow Brownies
  1. Prepare brownie batter as normal, and put into oven. Bake until 10 minutes remaining.
  2. While the brownies are baking, take the marshmallows and cut them in half. Measure out the chocolate chips.
  3. When there are 10 minutes remaining on the brownies take them from the oven and put the marshmallow halves all over the top. Sprinkle the chocolate chips over, too.
  4. Continue baking for 10 more minutes. Remove from oven and serve while slightly warm, cool, or reheated.

Triple Chocolate Caramel Brownies

These triple chocolate caramel brownies are ooey, gooey, deliciousness. And how could they not be with three times the chocolate and caramel added in?

These are great warm or chilled. And they are super easy to make!

They are the perfect, decadent brownie for any occasion!




Triple Chocolate Caramel Brownies
  • Brownie mix and ingredients from back of box
  • 3/4 Cup Chocolate Chips
  1. Add the brownie mix and ingredients from the back of the box to a bowl. Combine, then add the chocolate chips and stir them in.
  2. Bake according to directions. Top while still warm.
Toppings
  • 1/2 Caramel Bits (NOTE: they are not labeled gluten free. Use under own discretion.)
  • 6 teaspoons Heavy Cream
  • 1/2 Cup Chocolate Chips
  • 1/4 Cup Heavy Whipping Cream
  1. Combine the caramel bits and 6 teaspoons heavy cream in a microwave safe bowl. Microwave for 20 second intervals, stirring after each, until melted.
  2. Add the chocolate chips and remaining 1/4 cup heavy cream in a microwave safe bowl and microwave 20 seconds at a time, stirring, until melted.
  3. Pour the caramel over brownies, then pour the chocolate ganache over them. Spread out.
  4. Serve while still warm, or place in the fridge and serve cold.

Gluten Free and Vegan Mug Brownie

You've heard of mug cookies before, but how about a mug brownie? This gluten free and vegan mug brownie is filled with a rich chocolate flavor and is ready in just a couple of minutes!

This mug brownie is cooked in the microwave, making it the perfect treat for any time that you want something quick and easy, yet still delicious. Try it out the next time that you are in a hurry, and you will love every bite.





Gluten Free and Vegan Mug Brownie
  • 1 1/2 Tablespoons Water
  • 1 Tablespoon Applesauce or Oil
  • 1/8 teaspoon Vanilla Extract
  • 1/2 Tablespoon Flaxseed Meal
  • 1 Tablespoon Sugar
  • 1 Tablespoon Brown Sugar
  • 1 Tablespoon Cocoa Powder
  • 1 Tablespoon Cornstarch
  • 2 Tablespoons White Rice Flour
  • A pinch Salt
  • 1 Tablespoon Chocolate Chips
  1. Measure all ingredients besides the chocolate chips into a mug. Stir together until well combined.
  2. Stir in chocolate chips.
  3. Microwave for 60 seconds.
  4. Remove from microwave and be careful not to burn yourself. Let cool a bit, then dig in.

Chocolate Brownie and Peanut Butter Ice Cream

Do you love brownies? Do you love peanut butter? Do you love ice cream? All three of those delicious foods come together in this Chocolate Brownie and Peanut Butter Ice Cream.

This is a gluten free dessert, and it is rich, chocolately, and perfect for cooling you down on a warm day. And we're supposed to have a lot of those coming up. So make a batch of this ice cream, crank up the AC, and stay cool.

In a delicious, rich and creamy ice cream...

All I can say is "yum."


Chocolate Brownie and Peanut Butter Ice Cream
  1. Melt 1/4 cup chocolate chips and spread into a very thin layer onto waxed paper. Refrigerate until firm.
  2. In a small bowl combine the peanut butter, powdered sugar, butter and vanilla extract (and a touch of milk, if too thick). Spread out onto firmed chocolate.
  3. Melt the rest of the chocolate chips and spread over the peanut butter mixture. Refrigerate once more. Once firm, chop into small pieces.
  4. Chop brownies into small pieces.
  5. Make your ice cream and fold in the peanut butter/chocolate and brownie pieces.
  6. Freeze for at least 4 hours before serving.

Gluten Free Brownie Bites

Brownies are my favorite.
I love how chewy, chocolate-y, soft, moist, decadent, sweet and delicious they can be. I love them frosted. I love them plain. I love them warm. I love them standing in the rain, on a train...
Anyways...

Brownies are amazing in any form, but when baked into perfect, little bit size pieces? They are the best. I brought these brownies to my brother's graduation party in June and they disappeared quickly. I even got asked for the recipe.

These brownies are super cute and they taste even better than they look.


Yum. I need another one of these, like right now.


These brownies are especially good when topped with a rich, chocolate frosting (recipe below). Go ahead and make them and fall in love with them, yourself.

Gluten Free Brownie Bites
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 2/3 Cup Cocoa
  • 1/2 Cup Brown Rice Flour
  • 1/4 Cup Cornstarch
  • 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/3 Cup Butter, melted
  • 3 Tablespoons Water, hot
  • 1 Tablespoon Flaxseed Meal
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Milk
  1. Preheat oven to 350 degrees.
  2. Heat the water and add the flaxseed meal to it, letting it sit for 10 minutes.
  3. In a medium bowl measure the sugars, cocoa, brown rice flour, cornstarch, xanthan gum, baking powder and salt. Whisk to combine.
  4. Make a well in the dry ingredients and add the remaining ingredients. Stir well.
  5. Scoop tablespoonfuls into a well greased mini muffin pan and bake for 12 to 15 minutes. Allow to cool slightly before removing from pan. Makes 20 - 24.
Frosting
  • 3 Tablespoons Butter, softened
  • 3 Tablespoons Cocoa Powder
  • 1 Tablespoon Light Corn Syrup
  • 1/2 teaspoon Vanilla Extract
  • A pinch of salt
  • 1 Cup Powdered Sugar
  • 2 Tablespoons Milk
  1. Combine the butter, cocoa powder, corn syrup and vanilla in the bowl of your mixer and beat until combined.
  2. Add the milk and powered sugar and beat again.
  3. Fill piping bag and pipe onto the brownies.

Gluten Free Caramel Brownies

When I first decided to throw these together I admit that I had doubts in my mind. I love brownies. They are one of my favorite desserts. And I didn't think that they could get any better than they already were. But I was proven wrong.

I can't imagine anything more decadent than these brownies.

They are gooey, caremly, chocolately, rich and delicious. It almost feels bad to eat one. And so good. 

Oh, so good.





Gluten Free Caramel Brownies
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Cocoa
  • 1/2 Cup Brown Rice Flour
  • 1/4 Cup Cornstarch
  • 1/2 teaspoon Xanthan Gum
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/3 Cup Butter, melted
  • 3 Tablespoons Water, hot
  • 1 Tablespoon Flaxseed Meal
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Milk
  • 1/2 Cup Caramel Bits (NOTE: they are not labeled gluten free. Use under own discretion.)
  • 1/2 Cup Milk Chocolate Chips, divided
  1. Preheat oven to 350 degrees.
  2. Heat the water and add the flaxseed meal to it, letting it sit for 10 minutes.
  3. In a medium bowl measure the sugars, cocoa, brown rice flour, cornstarch, xanthan gum, baking powder and salt. Whisk to combine.
  4. Make a well in the dry ingredients and add the remaining ingredients. Stir well.
  5. Fold in the caramel bits and 1/4 cup chocolate chips.
  6. Spread thick batter into a greased 8x8 or 9x9 pan and bake for about 20 minutes.
  7. Melt remaining 1/4 cup chocolate chips and drizzle over the brownies before serving.

Easy Gluten Free Brownies

I absolutely love brownies. 

They have been one of my favorite treats for a long, long time. 

I love them gooey and warm. I love them cooled with a thick layer of frosting on top. I love them when they're made with dark chocolate. Or with chocolate chips. Or pretty much any version of them (well, besides with nuts added!)

Easy Gluten Free Brownies
  • 1/2 Cup Sugar

Recipe: Gluten Free/Vegan Black Bean Brownies

I'm sure you've heard it all before... that nothing gluten free can taste good. That the gluten free diet means that you have to eat heavy, bad-tasting, dry, egg-y or expensive foods. Etc.
People can be very negative when they're talking about gluten free foods. And people can be very skeptical about trying them and making them.
This blog is to prove that there are good gluten free recipes and foods out there. I promise to give you only the best, just the ones that I myself love. Because, in the gluten free world, we need more positive-ity. We need one place we can count on to find good recipes, and only good recipes.

These gluten free black bean brownies were one of the first gluten free recipes that I tried and they are amazing. 
Not only are these brownies healthier than the real thing (much healthier), but they taste delicious and are surprisingly fudgy and decadent! I have made them so many times since finding the recipe, and they have turned out great each time.

Here you will find only the best gluten free recipes.





Gluten Free/Vegan Black Bean Brownies
  • 2 Tablespoons Flaxseed Meal
  • 6 Tablespoons Water
  • 3 Tablespoons Oil of choice
  • 1/2 cup white sugar or 2 Tablespoons NuStevia Simple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 3/4 - 2 Cups Black Beans (you can cook them yourself, or use a 15 oz can)
  • 3/4 Cup Cocoa Powder
  • 1 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  1. In the bowl of a food processor, combine flaxmeal and water and pulse a couple of times. Let the mixture sit a few minutes. 
  2. Add all remaining ingredients and blend a few minutes, until smooth, scrapping down sides as needed.
  3. Pour into a greased muffin tin (makes 12) or a 9" pan. 
  4. Bake at 350 degrees for about 20 minutes.
